A fresh, tangy zucchini relish for topping quesadillas and burritos! Lightly pickled with a bit of heat, it's a perfect summer condiment.
Servings: 2 cups
Ingredients
  • 1 zucchini, finely diced (about 220g or 2 cups)
  • 1/4 cup minced white onion (about 50g)
  • 1 jalapeno pepper, deseeded and finely diced
  • 1 teaspoon salt
  • 1/4 cup apple cider vinegar
  • 1 teaspoon cumin
  • 1/4 cup chopped cilantro
Instructions
  1. In a small bowl, combine zucchini, onion, jalapeno, salt, vinegar and cumin. Mix well.
  2. Let marinate 30 minutes to overnight.
  3. Add chopped cilantro just before serving.

SEASONED SECRET

The jalapeno pepper I used was relatively mild so the relish wasn’t too spicy. If you want to turn up the heat, you can keep the seeds, use an additional pepper, or use a spicier pepper like a serrano chile.

CHECK THE FRIDGE

You could use other vegetables with this relish and include corn or carrots. Red onions are also a good swap for white onion.
