Summer in Sacramento routinely hits triple digits so I’m always looking for a way to cool off. What better way than with what I eat and drink? This mint cucumber smoothie with blueberry is seriously one of the best!

The mint is super refreshing and tingly. The cucumber is hydrating and cool. And the blueberry adds a tart sweetness to the smoothie. Plus, the combination with yogurt makes for a great cucumber smoothie any time of day. I’ll often whip this up for breakfast, and add a scoop of protein powder.

I’ve even been known to make these as a post dinner drink with a splash of gin! Especially alongside my watermelon smoothie with jalapeno and my coconut smoothie with sweet corn.

Mint Cucumber Smoothie with Blueberry

This mint cucumber smoothie with blueberry is sweet and refreshing! A delightfully refreshing combination, it’s perfect in hot summer weather.

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 2 cups

  • 1 1/2 cup blueberries (fresh or frozen)
  • 1 1/2 cup diced cucumber, peeled and deseeded
  • 1/4 cup packed mint leaves (4 large sprigs)
  • 1/2 cup yogurt (optional)
  • 1-2 teaspoons agave (optional)

  1. Add all ingredients to a high speed blender.
  2. Blend until smooth. Serve immediately.

Recipe Notes

Be sure to deseed your cucumbers before dicing! Blended, the seeds will get slimy and cause the yogurt in the smoothie to curdle.

You can omit the yogurt or swap in your desired dairy-free yogurt or milk.
