Do you have a default food vehicle? By which I mean something that exists solely as a delivery mechanism for something else? Examples include crackers, tortilla chips and lettuce cups. Mine is crostini. I put pretty much everything on crostini. And when I was in Spain, I learned it was an international standard to put everything on sliced bread (enter pintxo)!
Crostini is an Italian appetizer of small, toasted bread slices topped with spreads, meats, and cheeses. Really, the toppings are as endless as the names for foods served on bread. While I love cheese and cured meats on crostini, I always want to provide options. These hummus and pesto crostini are excellent for vegetarians, vegans, or lactose intolerant friends (with a modification to the arugula pesto, see note below). Additionally, I serve the hummus and pesto crostini with gluten free crackers as well as toasted bread for those who prefer one or the other.

Hummus and Pesto Crostini
Ingredients
- 1 1/2 cups white bean hummus
- 1 cup arugula pesto
- 1 package Mary’s Gone Crackers or 1 loaf french bread, sliced and lightly toasted
Instructions

Spread a thin layer of hummus and pesto onto each cracker or slice of toast. Serve immediately.
Recipe Notes
SEASONED SECRET
I’ll often buy discounted day-old baguettes from a local bakery to make crostini. I slice it and freeze the bread so it lasts as long as I want! When I’m ready for this crostini, I’ll toast the frozen bread on a sheet pan in the oven.
VEGAN
