Coconut Smoothie with Sweet Corn and Ginger

Sweet corn is the hallmark of summertime. I used to hear that if it was “knee high by the 4th of July” we’d have a good harvest of sweet corn.

Most of the time, sweet corn gets shucked, then grilled or boiled. But I love it raw! I’ll put it in salads, in cold pasta, or blend it into this coconut smoothie!

This coconut smoothie with sweet corn and ginger has a mild sweet corn flavor. Raw sweet corn has a more starchy consistency but has a really lovely flavor. The coconut milk is creamy and rich, while the ginger cuts through with a light punch of warm, refreshing spice.

I make this coconut smoothie with chilled coconut milk and no ice, but you could easily add ice to keep it extra cold.

And you can always make it a delicious adult beverage with a little rum or vodka blended in. I recommend using a plain liquor so the flavors of the coconut smoothie and sweet corn can really shine.

While I’m at it, sometimes I’ll also make a watermelon smoothie with jalapeno or this mint cucumber smoothie with blueberry. Because these paper straws are pretty darn cute.

Ingredients

  • 2 cups fresh sweet corn kernels
  • 1 cup coconut milk, chilled
  • 2 teaspoons fresh grated ginger
  • 1/2 cup ice (optional)

Instructions

  1. Combine all ingredients in a high speed blender.
  2. Blend until smooth. Serve immediately.

Recipe Notes

Seasoned Secret

I love using fresh corn straight off the cob in this coconut smoothie! You could also use frozen corn. Be sure to use fresh ginger, not ginger powder. If you don’t have a high speed blender, expect a slightly chunkier smoothie than pictured.

    This looks delicious! I can’t wait to try. Do you think it would be good with coconut water instead of coconut milk? I know it’ll lose the creaminess, just thinking about calories and fat 🙂 thanks!

      Hi Caroline! You’re right, it will definitely be a different consistency. There’s less coconut flavor in coconut water but I think it would still be delicious! Especially if you can find one with chunks of coconut. I like the flavor of the Taste Nirvana brand best.
